About the Recipe
Vernelle's ambrosia is sure to please a crowd...especially when you're hosting Thanksgiving for 60+ people! Fortunately, no matter how big your party, this recipe works with proportions, so scale as needed.
1 14-oz can mandarin oranges
1 14-oz can diced pineapple in juice
1 11-oz jar maraschino cherries
1 c mini marshmallows
½ c raisins
½ c sweetened shredded coconut
½ c chopped walnuts
1 8-oz container cool whip
½ c sour cream
Drain the mandarin oranges and pineapple well, then add to a bowl. Drain the maraschinos, then give a rough chop before adding to the bowl.
Add the remaining dry ingredients, and stir to combine.
Fold in the cool whip and sour cream gently. Cover with cling film and let sit in the fridge until ready to serve.
Note: this recipe works with proportions. 1:1:1 for the canned fruit, and 2:1 cool whip to sour cream. To scale up, just increase all quantities.
